» WINE
The farm Signano has 25 hectares of vineyards.
Our products are the result of a specific attention that start in the vineyard, the production amounts to 70 quintals for hectare. For the Vernaccia it’s used the pressing, the protection of oxidation with the use of dry ice and a static clarification.
Then we add selected yeast and the fermentation continues with controlled temperature for 1 month. When the fermentation ends, the wines …… in February the Vernaccia are clear and bottled.
All our red wines, Chianti Colli Senesi and San Gimignano Rosso, start with manual collection of the grapes, moved, then, in the cellar, where they are put in the tanks for the fermentation with selected yeasts. In the second day there is the manual replacement for the extraction of the colour from the peels. At the end of the process there is the svinatura, the separation of liquid part from solid of peels and vinaccioli.
The fermented liquid is used in cement or put in barriques, depending on the product that you want to get.
The Rosato is a particular wine, produced by a traditional method and few innovation. In the process are used Sangiovese grapes, as Tuscan tradition, with little percents of Syrah grapes for an aromatic taste.
Vinsanto is a typical Tuscan wine, produced by grapes of Trebbiano and Malvasia Toscana. This grapes are dried to have, then, a sweet wine must. It makes old for 5-6 years, so the alcoholic fermentation starts and it is suspended with the atmospheric conditions, it fermented with warm temperature and stopped with cold temperature.
It is a wine perfect for all desserts, for cheese with jams and honey.

» OIL
The Farm Signano has 1300 plants of olive tree of different varieties, as the Frantoio, Moraiolo, Leccino and Pendolino. Tuscan varieties or florentine – Pistoia area.

The manual collection start in the end of October and it finish quickly to give a quality of the oil. The olives are put in crates, to have a good ventilation and prevent the moulds, and brought in the mill within 48 hours from the collection.

The pressing is made in a mill with continuous cycle with controlled temperature. This method exalts the consistence and the aromas of the olive oil, refine the conservation keeping a bigger quantity of polyphenols, natural antioxidants, with positive effects on cardiovascular circulation, the aging and the prevent of tumors.



» GRAPPA
Signano Brandy is produced with the distillation of the grapes as Vernaccia of San Gimignano.

The grapes are brought in the distillery within 3 days from the collection, to keep all the scents used to create the aromatic bouquet of the brandy.
